Chocolate Twinkie Dessert

Prep time: 10 Min
chill time: 15 Min

Ingredients:
9 Twinkies
1 lg. box instant chocolate pudding
1 1/2 Cups milk
4 Cups vanilla ice cream (softened)
8 oz. Cool-Whip
3 Heath candy bars, crushed (I put them into a large baggie, and pound with a mallet)


Directions:
Slice Twinkies lengthwise and lay in cake pan, filling side up.
Mix pudding with milk, add ice cream. Spread on top of Twinkies.
Top with Cool-Whip and sprinkle candy bars on top.

Keep refrigerated.

Peanut Butter Squares

Prep time: 10 Min
cook time:  5 Min
cool time: 25 Min


Ingredients:
2 sticks margarine
2-1/2 cups confectioners' sugar
1 cup smooth peanut butter
1 3/4 cup graham cracker crumbs
1 pkg. 12 oz. chocolate chips


Directions:

Melt margarine. Remove from heat.
Add peanut butter, sugar and graham cracker crumbs. Mix well.
Spread in ungreased 9x13 inch pan. Press down evenly.
Melt chocolate chips.

Spread over top of peanut butter mixture.
Chill 25 minutes.

Cut in small squares before completely cold.

Hostess Twinkie Dessert

This is a favorite around our house!  Simple to make and great to eat!

Prep time: 5 min

Ingriedents:
1 box Twinkies
1 can vanilla pudding
2 bananas, sliced
1 (21-oz.) can cherry pie filling
Whipped cream or Cool-Whip (8 oz. container)

Directions:
Slice Twinkies length-wise and put into 9x13 inch pan.
Layer vanilla pudding, bananas & cherry pie filling.

Top with whipped cream or Cool-Whip.

Refrigerate.

 Note: May use 1 (6-oz.) box instant vanilla pudding, mixed according to box directions, in place of can of pudding.

Mayonaise Lemon Pepper Salmon

Mayonaise Lemon Pepper Salmon

Serves 4

Ingredients
3/4 cup(s) mayonaise
Lemon Pepper
1  salmon



Instructions

Set oven to broil.. prepare a baking sheet and place the salmon in the middle.

Generously apply the mayonaise over the top of the salmon so it is about 1/2 inch thick.
Sprinkle Lemon Pepper all over for a nice coating.


Broil for 7-12 minutes depending on the size of the salmon, watch the salmon for desired tendernous.
Dressing Top should have a nice light brown look to it.

Tangy Baked Salmon

Great tasting gourmet baked salmon
Serves 4
Prep Time: 3 min
Cooking Time: 7 min
Ingredients
3/4 cup(s) ranch dressing
3/4 cup(s) mayonnaise
2 pinch dill
1 kilogram(s) salmon


Instructions
Preheat oven to 375 F, prepare a baking sheet with tin foil covering and place the salmon in the middle.
Mix in a bowl mayonaise and ranch dressing, slice lemon into thin slices. Generously apply the sauce to the top of the salmon, followed by the lemon. Sprinkle dill on salmon.
Bake for 7-12 minutes depending on the size of the salmon, watch the salmon for desired tendernous.
Guaranteed hit...delicious with mashed potatoes!

Pork Schnitzel


Another great recipe from Germany.


Serves 2


Prep time: 20 min
cook time: 15 Min



Ingredients
2 (3-ounce)pounded thin pork chops boneless
salt and black pepper
All-purpose flour, for dredging
2 eggs, beaten
Bread crumbs, for dredging
2 tablespoons butter
3 slices smoked bacon, roughly chopped
1/2 onion, diced
Mushrooms (if you like)


Directions
Pat cutlets dry. Season cutlets with salt and pepper, then cover in flour, then egg, then bread crumbs.

In a large skillet, add butter and saute cutlets on both sides until golden brown and crunchy.


At the same time in a separate skillet over high heat, cook the bacon, mushrooms and the onions until they both start to brown.


To serve, spoon bacon, butter and mushrooms over browned schnitzels.

Chicken Cordon Bleu


This is a great recipe I learned while living in Germany.

Ingredients
4 tablespoon butter
1 cup flour
4 boneless, skinless breasts of chicken
2 eggs lightly beaten
4 very thin slices ham
2 cups bread crumbs
6 ounces swiss cheese cut into four chunks



Directions
Preheat oven to 375 degrees. Melt butter in glass baking dish. Slice Chicken Breasts into a butterfly not cutting all the way through. Lightly flatten chicken breasts between plastic wrap with mallet.

Lay 1 slice of ham and 1 piece of cheese (or more if you like) on flattened breast, fold in half or roll and seal close with toothpicks.

Repeat process for remaining chicken breasts.

Coat each piece with flour, then eggs and then bread crumbs.

Place chicken pieces in glass baking dish. Turn to coat with butter. Bake for 40-45 minutes or until golden brown.

Simple Nachos


Serves 4 as a meal, or 12 as a snack

Prep Time: 15 min
cook time: 15 min

Ingredients
1 pound hamburger
1 can diced tomatoes (if you like tomatoes)
2 teaspoons or less taco seasoning mix (or use the taco meat recipe I have listed below)
2 tablespoons sour cream
1 dash seasoning (seasoned salt, hot sauce)
corn tortilla chips
Cheese

Directions:
In a skillet cook ground beef with seasoning or taco meat recipe.
When beef is browned ( if you like add the can of diced tomatoes ), cover and allow to simmer about 5 minutes.

Put tortilla chips on a large plate.
Sprinkle beef over tortilla chips and microwave until cheese is melted.
Place 2 tablespoons of sour cream on plate. (hot sauce, jalapenos, pepper chinis whatever you like)
Serve and enjoy.

Best Fried Pork Wontons your family will love them




Very simple to make and does not take much time at all. And best of all low low cost to make.


Prep time:10 min

Ingredients:
won ton wraps (found with the fresh vegetable ection)
2 pork chops (can be any kind steak, loin regular)
chives
Sauce: any oriental flavor that you like or you can use a BBQ sauce too!
salt & Pepper
cooking oil




Directions:
cut pork chops up into small pieces, add them to a blender a food processor or the magic bullet. Throw in some chives for color, pour in about 1/2 cup of your favorite sauce and add salt and pepper to taste. Blend all of this until the pork is just "squishy" no lumps left. In a frying pan or a griddle add about 1/4 cup cooking oil let warm.




take each won ton (they are square) and put them at an angle, I use my fingers and grab a nice size pinch and place it in the middle of the won ton. I fold the won ton at the angle to it looks like a triangle. Take a little water on your finger and place it where the two pieces fold. Pinch or push on edges to keep them from popping open.






Now with your oil warm place the stuffed wontons in the pan and cook until both sides are nice and crispy (less if you like).




Now time to eat! I like to dip mine in a sweet and sour tangy sauce. Just perfect and kids love them.

Chicken Fried Steak


Now you can make your own delicious Chicken Fried Steak!

Quick and Easy


Serves 4

Now, you can make it at home in hardly any time at all.

Prep time: 10 min.
Cook Time: 25 min.


Ingredients:

1/4 cup all-purpose flour
1/2 tsp each salt & pepper
1 lb cubed beef steaks
1 egg, lightly beaten
2 Tbsp milk
1 cup saltine cracker crumbs
Canola oil
3 Tbsp all-purpose flour
1 1/4 cup chicken broth
1/2 cup milkDash of Worcestershire sauceDash of Tabasco or any other hot sauce

Directions:
Combine first 3 ingredients; sprinkle on both sides of steaks.

Combine egg and milk in a shallow dish, dip the steaks in it and dredge in cracker crumbs.

Pour about an inch of oil into a large heavy skillet and fry steaks over medium heat until just browned, turning once, carefully to preserve the coating.
Cover,reduce heat to simmer, and cook for about 15 minutes, turning occasionally and, again, carefully.

Remove steaks and drain on paper towels. Drain off drippings, reserving 3 Tbsp in skillet.
Add 3 Tbsp flour, stirring until smooth. Cook 1 minute, stirring. Gradually add broth and 1/2 to 3/4 cup milk and continue cooking over medium heat, stirring constantly until thickened and bubbly. Stir in Worcestershire sauce and hot sauce.
Serve this wonderful gravy over the steaks and,if you like,rice or potatoes.

INGREDIENTS
2 tablespoons pizza sauce
1 whole pita breads
6 slices pepperoni sausage
2 fresh mushrooms, sliced
1/4 cup shredded mozzarella cheese


DIRECTIONS
Spread pizza sauce over pita bread. Top with pepperoni, mushrooms and cheese. Place on an ungreased baking sheet. Bake at 400 degrees F for 4-6 minutes or until cheese is melted.

Cheesy Ramen Noodles


"This is an extremely simple and delicious spin on the typical ramen noodles


INGREDIENTS

2 cups water
1 (3 ounce) package any flavor Ramen noodles
1 slice American cheese or Parmesan cheese
slice of butter


DIRECTIONS
Bring water to a boil in a saucepan. Add ramen noodles and cook 2 minutes until tender. Pour out water, then stir in seasoning packet, butter and cheese to serve.


Mix up and mmmmmmm good!

Quick Chicken Cutlets


Boneless, skinless chicken breasts -- sometimes called cutlets -- are a boon to family chefs, a perennial kid favorite, and easy for a parent and child to prepare together. They taste great served fresh from the pan and dipped in our homemade honey mustard sauce.



RECIPE INGREDIENTS:
4 boneless, skinless chicken breasts (about 6 ounces each)
2/3 cup fine dry bread crumbs
1/3 cup freshly grated Parmesan
2 teaspoons dried basil (if you have it)
1 teaspoon dried oregano (if you have it)
1/2 teaspoon salt
1/8 teaspoon pepper
1 egg, beaten
2 tablespoons milk
1/2 cup flour
2 to 4 tablespoons olive oil for frying



1. Rinse the chicken breasts under running water, then place them on a double layer of paper towels and blot them dry. (Be sure to wash your hands well in warm soapy water immediately after handling raw chicken; do the same for any cutting boards or utensils that the meat comes into contact with.)


2. Place 2 of the chicken breasts inside a large, heavy-duty plastic freezer bag. Partially seal the end of the bag, leaving a slight gap so air can escape. Using the smooth head of a tenderizing mallet or a rolling pin, pound the meat in even strokes, working from the center out (be careful not to tear the plastic), to a uniform thickness of about 1/3 inch. Repeat this process with the remaining chicken in a new plastic bag. Put the pounded cutlets on a plate and set them aside.


3. Combine the bread crumbs, Parmesan, basil, oregano, salt, and pepper in a shallow medium-size bowl. Stir them to mix. In a separate shallow bowl or pie plate, beat together the egg and milk. Set both of the bowls aside.


4. Spread the flour on a plate. Arrange the breading ingredients in assembly-line fashion in this order: cutlets, flour, egg mixture, crumb mixture, empty plate. Working one piece at a time, dredge both sides of the cutlet in the flour, knocking off the excess.


5. Dip both sides of the floured cutlet in the egg mixture.


6. Coat both sides of the cutlet with the crumb mixture. Set the breaded cutlet on a clean plate and repeat the process with the remaining pieces.


7. Set a large skillet over medium-high heat and pour in enough olive oil to coat the bottom of the pan, about 2 tablespoons. Heat the oil for 2 to 3 minutes, then add the cutlets. (If your pan isn't large enough to cook 4 chicken breasts at once, cook them in batches rather than overcrowd the pan.)


Fry each side for 2 1/2 to 3 minutes, turning once, until the chicken is browned and cooked through. (To test, make a small cut in the center of the meat; there shouldn't be any traces of pink.) Remove the cutlets from the heat and serve. Makes 4 servings.


8. Make the tangy-sweet honey mustard dipping sauce: Stir together 1/4 cup deli-style mustard, 3 tablespoons sour cream, and 1 to 1 1/3 tablespoons honey, to taste.

Fried Zucchini


Prep Time: 5 Minutes
Cook time: 10 minutes



Ingredients:
4 Small Zucchini
1/4 cup flour
Salt & Pepper
2 tbsp. Parmesan cheese, grated
1 tsp. garlic salt
2 tsp. vegetable oil

Directions:
Cut Zucchini in slices about 1.4 inch thick. In a zip lock bag add flour, parmesan cheese, salt and pepper and a little garlic salt. Put zucchini slices in bag and shake well. In a frying pan add vegetable oil, let it get hot. Put slices of zucchini in and cook for 5 min. then flip to other side and cook for 5 min. Zucchini should have a nice light brown coating to them.

Serve and eat!

Taco Meat...Feed the whole family


Growing up we did not have a lot of money...so hamburger was the meat we ate. Even then we had to learn to make it last and feed all of us. So this recipe not only tastes fantastic but will make a pound of hamburger feed a family of four with each having 4 tacos.



Cook time: 10 minutes


Ingredients:
1 pound hamburger
1/4 cup Ketchup
1 TBS flour
seasoning salt


Directions:

Fully cook hamburger in skillet (season with small amount of seasoning salt). Add approx 1 tablespoon flour and about 1/4 cup Ketchup. You want the hamburger to stick together but not be thick. You can always add more floor or Ketchup as needed.


This makes a great tasting taco! fill your shell, add cheese, onions, lettuce, hotsauce...whatever you like and enjoy!


Another great idea with this meat is to make a taco burger....just add meat to hamburger buns make a sauce with mayo and Ketchup mixed...add cheese and whatever you like.


Guaranteed to be a crowd pleaser and everyone will want to know your recipe.

Best French Toast Ever!


This french toast has a little spin on it and although it doesn't sound like it would be good...Trust me this is fantastic.


Prep time: 5 min
Cook time: 30 minutes

Ingredients:
4 Slices bread (white or Texas toast)
1 egg
1/2 cup milk
sugar with a little cinnamon
cream cheese at room temperature

Directions:
First pull bread apart into bite size pieces. In separate bowl mix egg and small amount of milk, add the sugar (to taste ...more = sweeter).


Use a baking pan, add bread pieces and pour egg, milk and sugar mixture over the top. Take the cream cheese and cut into small pieces and spread around your bread mixture.

Put in oven at 350 degrees and cook until liquid is absorbed into the bread.

The cream cheese will not fully melt and will stay in small chunks and makes this a super dinner, breakfast or I just need something to eat meal.
Feel free to add strawberries or your favorit fruit to the top!

Indian Fry Bread


Indian Fry bread is not only delicious but quick and easy. You can eat this plain, with butter, Jelly, cinnamon sugar, drizzled with honey, with powered sugar or as a base for you tacos.


Prep time: 10 min

Cook time: 5 min


Ingredients:


  • 3 cups flour

  • 1 1/2 tsp. baking powder

  • 1/2 tsp. salt

  • 1 1/3 cups warm water

  • cooking oil, vegetable, olive, corn etc

Directions:


Mix the flour, baking powder and salt. Add the water and knead the dough until soft. Divide the dough into 4 equal portions and roll dough to 1/4 inch think rounds.


Fry bread in 2 inches of your favorite cooking oil until dough is puffed and lightly browned on both sides, turning only once. Drain on absorbent paper.


Add your choice of toppings and dig in!

Potatoes, Eggs and Cheese Medley


Potatoes, Eggs and Cheese Medley

A favorite for both young and old alike.








Servings are for 4 so you can adjust as needed.
Prep time: 10 minutes
Cook time: 15 minutes


4 Potatoes shredded (baby reds are great with this)
3 Eggs scrambled in bowl (not cooked yet)
Velveeta cheese or whatever kind of cheese you like
Salt & Pepper
Diced onions (if you like)
Sausage, bacon or ham (if you like)

Use medium frying pan with small amount of oil, fry shredded potatoes (and onions) until they are brown on each side.
Add uncooked scrambled eggs directly to the potatoes, cook until eggs are cooked through.
Add Cheese (depends on how much you like) let cheese melt all the way through.

If you are adding sausage, bacon, links, ham etc...throw in the microwave for a quick cook or cook traditionally. Now add salt and pepper to taste, meat you have chosen and serve.



Quick, simple and delicious. Very filling and additive!
